The crown jewel of the Pearl Roe collection. Large, glossy pearls with the silken weight of butter and a finish that holds long after the last grain. Descended from the Beluga family, raised in pristine cold-water aquaculture, cured by hand to the traditional malossol standard.

Origin & Species

Aquaculture-raised Kaluga sturgeon (Huso dauricus), the largest member of the Acipenseridae family and a close relative of the wild Beluga. Our partner farms operate in clean cold-water systems in Northern Europe, where temperature, salinity, and feed quality are monitored to a higher standard than most kitchens.

Tasting Notes

Flavour: Rich, buttery, and resonant. A hallmark Kaluga creaminess gives way to a deep brininess and a long savoury finish.
Texture: Pearls of 2.8 to 3.4 mm. Firm enough to roll across the tongue, soft enough to release on light pressure.
Finish: 30 seconds or more. Layered, mineral, faintly nutty.

The Serving Ritual

Remove the tin from refrigeration ten minutes before service. Open at the table. Smooth the surface gently with the mother of pearl spoon included with your order. Place a small mound on the back of the hand between thumb and forefinger, the traditional caviar bump, and let the warmth of the skin open the flavour.

Pairing

Champagne: Blanc de Blancs, extra brut. Try Pierre Péters Cuvée de Réserve or Salon Le Mesnil for the occasion of a lifetime.
Vodka: Premium neutral, served at freezer temperature. Belvedere, Beluga Noble, or Reyka.
Wine: Premier Cru Chablis or a steely cold-climate Riesling.
Accompaniments: Warm blini with crème fraîche. Halved new potatoes with cold butter. Toast points of brioche.

Sizing

50g serves two as an opening course. 100g serves four. 250g serves a dinner of eight. 500g and 1 kg for restaurants, large celebrations, and gifting.

Storage

Refrigerate at 28 to 38°F (-2 to +3°C). Unopened tins keep four to six weeks from production date. Once opened, consume within 48 hours. Never freeze.
